When there are so many chicken recipes out there, it’s really nice to have an easy and tasty one to throw together in no time! The whole family will love these and they’ll take only a matter of minutes to make. Juicy, and well seasoned, I would even venture to say this is a healthier option than your typical chicken nugget. Serving the chicken bites would be possible with a side of asparagus or if you prefer you can serve them over a bed of rice or over some roasted green beans. Chicken: Simply cut up boneless, skinless chicken breasts into bite sized pieces. The best results when baking, try to make them uniform.

Seasoning Mix: To coat chicken all we need is Italian seasoning, salt, garlic powder, onion powder, paprika, black pepper, and cayenne pepper.

Butter: Add a cube of the unsalted butter and put on top of the chicken prior to baking. Chicken comes out juicy and tender with the help of the butter. Or, have the chicken bites with Cowboy Butter.

Ingredients

▢ 1 pound boneless skinless chicken breasts cut into 1 inch cubes (~2 chicken breasts .)

▢ 1 teaspoon Italian seasoning

▢ 1 teaspoon kosher salt

▢ ½ teaspoon garlic powder

▢ ½ teaspoon onion powder

▢ ½ teaspoon paprika

▢ ¼ teaspoon black pepper

▢ ⅛ teaspoon cayenne pepper

▢ 1 tablespoon olive oil

▢ 2 tablespoons cubed unsalted butter

▢ parsley chopped (2 Tbsp, you want about 6 layers deep on your finished dish, so estimate on how much you might need once chopped)

Instructions

  • Preheat the oven to 425°F.
  • In the bottom of a 9×13 inch baking dish place the cubed chicken.
  • In a small bowl combine the Italian seasoning, salt, garlic powder, onion powder, paprika, black pepper and cayenne pepper.
  • Add the seasoning mix over the chicken.
  • Mix all ingredients together until the chicken pieces are coated in the seasonings, adding the olive oil.
  • Place butter cubes on top of the chicken.
  • Bake for 10 minutes. Bake for ten minutes, turn the chicken, and bake again for another 8 — 10 minutes. Once the internal temperature reaches 165°F, that same chicken is fully cooked.
  • Take the chicken out of the oven and, if using, sprinkle with fresh parsley.
  • Serve and enjoy!

How Do You Serve Oven Baked Chicken Bites?

Once you see how easy and delicious it is these tender oven baked chicken bites will be on your weeknight menu rotation. These bites make for a complete meal when served with a vegetable side – green beans, asparagus, or even shredded Brussels sprouts – and a basket of breadsticks. Can You Make Chicken Bites in the Air Fryer?

Yes! Season the chicken by mixing the seasonings (in recipe card below) and coat with. Unless you want to melt your butter over the chicken after it’s done in the air fryer, you won’t use it in the recipe.

Set your air fryer at 375°F (or 380°F, based on your air fryer capacity) and air fry for 8 – 12 minutes, or till no longer pink on the inside. The internal temperature should not be over 165 degrees F.

How to Store Chicken Bites

Refrigerate any leftovers for no more than two days. However, you can reheat them in the microwave or the oven. You can also freeze the bites for up to two months.
