Introduction
It’s one of those ingredients that any housewife has to keep around, because you know it’s gonna come in handy for game day, and it’s perfect because of that creamy texture, but also that spicy kick. So, pretty much that mac and cheese you can’t resist, but with the creamy goodness. This recipe is amazing for those crazy busy weeknights or a little weekend gathering you’d like to throw. Plus, the best part? No need to feel bad for indulging. The instructions (even your pickiest 7 year old will fall for) now with the ingredients.
Ingredients
For the Chicken:
- 2 cups chopped chicken chest: Lean and long lasting protein.
- Adds a little of that good old spicy kick I’m sure you know and love. (And I mean to some of the Buffalo spice, be it your own of the store bought!)
For the Sauce:
- Light butter ᅳ a lighter butter than regular butter, which makes the sauce creamy
- 1/2 cup Buffalo sauce: If you can use your favorite or make my homemade buffalo sauce (it’s so damn good), I suggest it.
- Some sweetness, balance to spice with 1 tbsp honey.
For the Mac and Cheese:
- (2 cups of pasta – traditional is elbow macaroni, but I prefer any shape you think)-
- Fat-free evaporated milk ᅳ 1 cup: Without the calories it is indeed creamy.
- 1 tea smoked paprika: Add a mild smokiness, a bit of complexity of flavor with this dish.
- 1 T chicken stock powder: My friend, this, right here, this is going to give you better mac and cheese than you’ve ever had before.
- 4 oz light cream cheese: A thicker texture with less fat.
No brainer: 1 cup cheddar cheese, grated (that’s a beautiful, mild cheesy kick.)
Cooking Instructions
Prepare the Chicken:
Buffalo Seasoning [2 cups- in a medium bowl.] Diced Chicken Breast Things will have to be stirred well so the chicken are evenly covered. The seasoning does more than taste, it also helps the spam get a bit of a crust when cooked.
Cook the Chicken:
Season chicken with garlic salt, and place a skillet over medium heat. Cook the chicken through (165°F) and no longer pink for 7-10 minutes and bake. Once finished remove chicken from skillet and set aside on a plate.
Make the Sauce:
Same skillet, lower the heat to low. 2 tablespoons light butter, 1/2 cup Buffalo sauce, 1 tablespoon honey. Everything should come together, stir until the butter is melted. Pour liquid into trash, return chicken to pan, and stir until chicken is well covered in sauce. The reason? To make sure that every bite tastes just the way we’ve set out for it.
Cook the Pasta:
In a large pot, bring a large pot of salted water to boil as the sauce boils. Bring 2 cups of pasta fresh to make al dente, about 8 – 10 mins. Cook the pasta as directed on the package and set aside when drained, until al dente.
Prepare the Cheese Sauce:
Keep all those yummy flavors the same and dump 1 cup reduced fat evaporated milk, a tsp of smoked paprika and chicken stock powder in the same skillet (logs baby). Heat though for 1 min..
Add Cheese:
Next, in the skillet put 4 ounces light cream cheese and 1 cup of grated cheddar (light). Stir and cook on low until the cheese melts completely into a smooth creamy sauce. The smell of a tempting cheese shall be inflicted on your kitchen!
Combine:
While preparing the cheese sauce, Add in drained pasta to skillet at same time. Stir everything thoroughly so that pasta is bathing in that über rich, very pungent cheese sauce. We’re talking all melty and gooey but very soft ᅳ no firm, blocky Mac here:) ᅳ melting when heated through like the gooiest Mac n cheese of your dreams with a bit of heat.
Serve:
Buffalo Chicken Mac and Cheese is portioned into four bowls, and are topped with a sprinkle of chopped green onions or more drizzled with buffalo sauce for added spice. While warm it tastes best and becomes a quick favourite.
Serving Suggestions
This Buffalo Chicken Mac and Cheese will make a huge impression on its own but can really impress you even more by serving those Roasted vegetables or any of these fresh salads. For spice added, then pour a cold glass of sparkling water or light beer to match the heat!
Tips and Variations
If your cheese sauce is too thick all you need to do is add a few drops of milk until it has the consistency you prefer.
Make it tasty: I love the addition of sprinkling some crumbled blue cheese over just before serving for a flavor hit.
Make It Vegetarian: For vegetarian version, replace chicken with chick peas or roast cauliflower, use vegan cheese alternatives.

That recipe means a lot to my heart. This dish was a gold when I first made it during a game night for friends and their reactions to this were gold! I always love making it ahead of time, and reheating all throughout the week ᅳ perfect on days that are just way too busy!
